Pickles and Weird Emails

While in New Mexico, my sister and I were discussing recipes. 
I told her I wanted to make pickles and she said she makes quick pickles. 
I forgot to get her recipe so I Googled it. 
 I had acquired some small cucumbers a while back from someone who had an abundance of them and knew I wanted to try this.
We like pickles in these here parts.


Quick Pickles

• 1 cup of distilled white vinegar
• 2 tbsp granulated sugar
• 4 tbsp water
• 1 1/2 tsp kosher salt
• 1 tsp dry dill weed
• 2 cloves of garlic, lightly smashed
• 1 tsp red pepper flakes
• 2 bay leaves
• 2 cucumbers, cut into thick slices

I doubled this recipe and used 6 small cucumbers.

Begin by adding the vinegar, water, sugar, salt, garlic, and peppers to a sauce pan and bring to a boil, stirring well to mix in the sugar.  Once boiling, remove from the heat, and add the dill weed. Let the pickling mixture completely cool. Add in the bay leaves.

To a clean mason jar, add the cut cucumbers, arranging them the best you can. Pour in the cooled mixture, cover, and let sit in the refrigerator for at least 4 hours, however overnight is probably best. When you are ready, open and serve. Now you have pickles any day of the week, and is probably much more affordable than getting them at your local market.

These are good in the refrigerator for a couple of weeks, then they get pretty soft. They typically do not last that long in the refrigerator though.

On a side note, my husband calls cucumbers "Home Wreckers". 
That's funny, unless my father is reading this.
Then, I have no idea what he is referring to.

Here's the other thing I wanted to talk to you about.
Well, Dad sent me this email today after reading that post.

Hi Kid: 
"Mondays with Max" reminds me of "Tuesdays with Morrie".  Remember that? 
Morrie was this old guy that was dieing & every Tuesday a young friend visited and wrote down his words of wisdom which turned into a book and made the young man rich. 
This made me wonder if asked, could I come up with any words of wisdom? 
The only thing that comes to mind is "use your turn signals"....Good luck on getting rich.

Oh, I am so going to try this pickle recipe! Thank you for sharing it...I love pickles but have been anxious about trying to pickle them myself. I remember my mom putting cucumers in crocs for days when I was little! It was tedious, but it made the house smell good!

I may have to try those pickles. I used to make them a few generations ago but had to quit. I was the only one in the house that liked them. And you can only make just so many, ya' know. To have 7 cupboards full of quart jar pickles is kind of ridiculous.

Ooooh, fun. I bet your pickels are gonna be so good! I wanna make pickles now. Maybe my garden will produce enough cucumbers to let me do that.

Cute last post on crushes! I had the biggest crushes on Luke Perry and Jason Priestly back in the 90210 days. I recently bought a tank top with a pic of the whole cast of 90210. I'm giddy about it. :)

I haven't made pickles (or canned) in AGES. Because iit was alot of hard, sweaty work that got eaten and then you have to start all over again.....whew.

Your pickles may be just the thing to make, tho. No muss ~ no fuss. I'm getting too old to bother with alot of drama in the kitchen!

Personally, I like Max's words of wisdom. Do you know how many people DON'T use their turn signal? Like we're all cosmic and knew that they were turning right instead of left? sheeez.....

On a side note, I've been to where your sis has her cabin. Lovely area and in the Fall it smells like apples and is filled with bees!

Your dad is just too hilarious. You are his kin; I can tell. See, being adopted is a threat other people get when their relatives don't claim them. For me it's my reality. I'm just a misfit. Truly... Oh, and what did you mean on Daughter's blog about my taking bad pictures with my new camera. Do I take bad pictures? And I thought I was doing so much better... I checked out Photography for Dummies from the library. I really did. Hope I can understand it.

Okay this post goes in two totally different directions. Love your dad's sense of humor. Yum home made pickles. I am always afraid I will poison us if I try to can anything but fridge ones might be safe to try.

Those are great words of wisdom!!!!!!! That's one of my major pet peeves--people who don't use turn signals. I inherited this and any quilting know-how from my gramma :)

Your post about crushes was so funny...I have a huge crush on Dr. Oz myself! The pickle recipe looks great...last year we could find certain ingredients for the recipe we got from the Food Network for pickles and had some extra cucumbers...so we cut them up and put them in a jar full of old Vlasic pickle juice! It worked too. They tasted pretty good...thifty too! Have a great weekend!
